I introduced my girlfriend at the time, Haley, to Kona Brewing’s Wailua Wheat and we both loved it during our summer trips to the Big Island. I wanted to brew something similar that would be sweet, light, and have a very mellow fruit finish.
I started with a kit from O’Shea Brewing for an American Hefe, and then added 2oz of apricot extract at bottling time. I was expecting it to be hazy like a normal hefe, but it turned out to be extremely clear. Regardless, the name stuck and it has been a real crowd pleaser.
